Shaahi paneer


Ingredients: 2 cups paneer, 1 chopped onion, 1/2 cup curd, 5 cashew nuts, 2 tbsp ginger garlic paste, 2 green chillies, 1/2 tbsp cumin seeds, 1/2 tbsp red chilli paste, 1/4 tbsp turmeric powder, 1/2 tbsp cumin powder, 1/2 tbsp coriander powder, 1 tbsp salt, 1/4 cup water, 1/4 cup of milk, 1/4 cup cream

For garnishing: 3 tbsp coriander leaves.


Method: Add chopped onion, curd, cashew nuts, ginger garlic paste, green chillies to a grinder and make a smooth paste out of it. Heat 2-3 tbsp cooking oil in a pan. Add umin seeds, red chilli powder, turmeric powder, cumin powder, coriander powder, salt, water and the grinded paste and cook it for a while. Add paneer to the gravy and cook it for a while then add milk and cream to the pan. Garnish it with coriander leaves, serve it hot.

Butter chicken

Ingredients: 1 kg chicken, 2 tbsp salt, 2 tbsp red chilli powder, 3 tbsp ginger garlic paste, 1/4 tbsp turmeric powder, 1/2 tbsp mixed spices, 1 tbsp charoli powder (also called chironji), 1 tbsp cashew nut powder, 3 tbsp tomato sauce, 2 tbsp mustard sauce, 1/4 tbsp cardamom powder, 1 tbsp black pepper powder, 1 tbsp white pepper powder, 2 onions sliced, 4 tbsp cooking oil, 1/2 tbsp dried ginger powder, 1 and a half cup curd, pinch of cooking oil.

For garnishing: 3 tbsp grated buter, 3 tbsp coriander leaves.


Method: Mix chicken well with all the ingredients and let it rest for 2-3 hours. Place a pan on the stove, add some oil and then add sliced onions, fry them until golden brown. Now add marinated chicken to the pan and stir fry for sometime. Later add 1 cup of water and cover the lid, let it cook for 20-30 minutes. Take it off the stove and garnish grated butter and coriander leaves.Serve hot with tortillas.

Chicken balls

 Ingredients: 4 cups of boiled minced chicken, 2 tbsp onion paste, 3 tbsp coriander, 3 eggs, 2tbsp butter, 1/2 cup refined flour, 1 cup bread crumbs, 2 tbsp black pepper powder, 3 tbsp melted cheese, 1 tbsp salt.

Method: Heat a pan, add butter and onion paste, fry it for a minute and add it to the minced chicken and mix it up well along with salt, black pepper powder, coriander, 1 egg and cheese. Divide the mixture into small sized balls and refrigerate for two hours. Take a bowl and beat two eggs,add some salt and black pepper powder and keep it aside. Now dust the chicken balls with refined flour, dip it in the egg mixture and then with bread crumbs. Deep fry the balls until golden brown. Serve hot.

Minced meat cutlet.

Ingredients: 1/2 kg minced meat, 2-3 tbsp butter, 2tbsp ginger garlic paste, 1 tbsp salt, 1 tbsp red chilli powder, 1/2 tbsp cumin powder, 1/2 tbsp coriander powder, 1/2 tbsp garam masala, 1/2 cup coriander leaves, 2 kg boiled and mashed potatoes, 2 tbsp black pepper powder, 3-4 eggs.
Method: Heat butter in a pan, add minced meat, fry it for a while, then add ginger garlic paste, salt, red chilli powder, coriander powder, cumin powder, garam masala and some coriander leaves and cook it until the meat is done. Pressure cook it if required. Mean while mix salt, black pepper powder and coriander leaves well in mashed potatoes and make thin and flat patty's out of it. Take a flat patty and place some cooked meat over it and then cover it with another flat patty and seal the sides by pressing it firmly. Take eggs in a bowl and beat them up well by adding salt and 1/2 tbsp black pepper powder. Now dip the patty's in the egg and fry it on the pan on medium flame. Serve it hot with mayonnaise and salad.

Chicken and cheese macaroni

Ingredients: 1tbsp butter, 1 cup boiled and shredded boneless chicken pieces, 1tbsp ginger garlic paste, 10-12 broccoli florets, 1/2 cup capsicum, 1/2 cup mushrooms, 1/2 cup baby corns, 1/2 cup sliced spring onions,1 tbsp salt, 1/2 tbsp dried oregano, 1/2 tbsp black pepper powder, 5-6 green chillies or 1 tbsp green chilli sauce, 1 cup of milk, 1 tbsp corn flour powder, 3 cups of boiled macaroni, 3 tbsp grated cheese.
Method: Heat butter in a pan, add boneless chicken pieces and ginger garlic paste to it, fry it up for a while then add broccoli, capsicum, mushrooms, baby corns, spring onions, salt, oregano, black pepper powder and cook it on low flame for 20 minutes. Mean while mix corn flour powder in milk and add it to the pan while stirring. Cook it for 5 minutes and then add boiled macaroni and green chilli sauce/green chillies and mix it up well. Cook it for 2 more minutes and garnish it with grated cheese and oregano. Serve hot.

Mocha mousse

Ingredients: 2 cups of water, 1 tbsp coffee, 4 tbsp cocoa powder, 2 tbsp gelatin, 2 cups of milk, 1/2 cup cream, 4 tbsp caster sugar, 1 tbsp whipped cream, 1 strawberry.

Method: Add 1/2 cup water to the bowl, add 1 tbsp coffee, 4 tbsp caster sugar and  heat it up. Take it off the stove and mix 4 tbsp cocoa powder. Add 1 cup of milk to it and cook it on low flame. Mean while add 2 tbsp corn flour mixed with some water. Put the stove off when it thickens. Now take another bowl and dissolve gelatin on low flame. Add gelatin to the milk mixture when it comes down to the room temperature. Take 1/2 cup of cream in a bowl,beat it well and add the milk mixture to the cream while stirring it. Take the mixture in small cups/bowls and garnish it with dollop of cream and strawberry. Freeze  it for 3-4 hours. Serve chilled.

Grilled Mutton Patties

Ingredients: 1/2 kg minced meat, 1 tbsp ginger garlic paste, 2 tbsp cumin powder, 2 tbsp coriander powder, 3-4 tbsp red chilli powder, 1/2 tbsp garam masala,  1 finely chopped onion,1 egg, 3 tbsp butter, salt, 1/2 cup bread crumb powder,1/2 cup refined flour,1/2 cup chopped coriander leaves.

Method: Cook the minced meat by adding salt,red chilli powder,ginger garlic paste,chopped onion, coriander powder, chopped coriander leaves,cumin powder and garam masala until it softens. Let it cool,then add it to the blender along with 1 egg and blend it until it forms a paste. Take it out in a bowl and and make flat pattys out of it and then dust the pattys with refined flour then bread crumb powder. Heat 3 tbsp butter in grilling pan,let it melt and then add the pattys to the pan and grill until it turns brown. Add some lime juice on pattys while serving. Serve it hot with ketch up and salad.

Roasted chicken stuffed with vegetables

Ingredients:  1 kg boneless chicken pieces,4 tbsp oil, 2 tbsp butter,2 tbsp greenchilli paste, 2-3 chopped onions, 2 tbsp ajinomoto, 1/2 cup chopped cabbage, 2 chopped capsicum(red and green),1/2 cup chopped carrot,2 tbsp chopped coriander leaves,salt,2 tbsp grated cheese, black pepper(as per required).

For chicken marination: Salt,red chilli powder,1/2 tbsp garam masala,1/2 tbsp coriander powder,1 tbsp cumin powder,1 tbsp ginger garlic paste, 4 tbsp lemon juice.

Method: Take oil in a pan,let it melt then add all the vegetables along with salt,ajinimoto,black pepper, green chilli paste and fry them for a while. Meanwhile marinate the chicken with marination ingredients and let it rest  for about an hour. Make a cavity in the chicken and fill it with fried vegetables. Close the cavity by sewing it.  Add 2 tbsp of butter and roast it both the sides on low flame until it turns golden brown. Garnish it with coriander leaves and some grated cheese. Serve it with salad and tomato ketchup.

Chick peas pulao

Ingredients: 1/2 kg Rice, 125 gm chickpeas(soaked in water for 4 hours), 125 gm butter, 1 chopped onion, 2 tbsp ginger garlic paste,1/4 tbsp turmeric powder, salt as per required, 1/2 litre milk, 7 cloves, 4 green cardamoms,5-6 red chillies,2 tbsp red chilli powder,coriander leaves.

Method: Take a bowl and add milk and chick peas to it, cook it on low flame until the milk is completely absorbed. Keep it aside. Now take another pan on the stove and add butter,let it melt, then add chopped onions,salt,cloves,green cardamoms,turmeric powder, ginger garlic paste and fry until the onion turns golden brown, then add rice and 3 cups of water to the pan and add 2 tbsp red chilli powder and red chillies. Cook it on medium flame for about 15 mins by covering the lid then add chick peas to it and mix it well and cook it on low flame for 10 more mins. Put the flame off, take it out in a serving bowl and garnish it with corainder leaves, tomato and redchilli flakes. Serve hot.

Hot chocolate


Ingredients: 1/2 cup Chopped dark chocolate, 2 cups of milk, 2 tbsp caster sugar, 2 tbsp whipped cream, pinch of cocoa powder.

Method: Melt dark chocolate on double boiler and then add 2 cups of milk to the chocolate and then add sugar. Stir it up well until it thickens. put the flame off and take it out in a cup. Add cream and then add a pinch  of cocoa powder on top of cream. 

Strawberry Smoothie

Ingredients: 10 fresh chopped strawberries, 2 cups of curd,1/2 cup caster sugar, mint leaves,pinch of cinnamon powder, 1 tbsp lemon juice

Method: Place strawberries in a blender along with 4 tbps curd,lemon juice and cinnamon powder,blitz to form a smooth paste. Take this out in a bowl with the rest of curd,add castor sugar and beat it well to form a smooth paste. Chill the smoothie for about two hours before serving. Ladle it in individual bowls, decorate it with cream, strawberry slices and mint leaves. Serve chilled.
